Ingredients

  • 800g Aduki Beans
  • 3ea Eating Apples
  • 500g Onions
  • 175g Miso paste
  • 30ml Tamari
  • 400g Leeks
  • 400g Chinese Cabbage
  • 300g Brown Rice
  • 30g Ginger
  • 20g garlic (weight)
  • 15ml Olive Oil
  • 300g MangeTout
  • 80g Walnuts
  • 50g Sesame Seeds
  • 200g Cashew Nuts

Cooking Instructions

1. Toast sesame seeds and walnuts in dry pan and lightly crush retaining some large pieces of walnuts 2. Chop cabbage and apple 3. Soften in olive oil 4. Add miso dissolved in water, tamari, aduki beans, brown rice, apple and cabbage. 5. Add enough water to cover and cook until vegetables are soft Blanche mangetout separately and quickly to retain colour 6. Scatter with crushed sesame and walnut and serve with mangetout
