Ingredients

  • 70g Reduced Fat Digestive Biscuits
  • 20g Flora Margarine
  • 125g Canned Rhubarb
  • 225g Low Fat Soft Cheese
  • 50g Clear Honey
  • 2ea Egg
  • 20ml Vanilla Essence
  • 120g Fresh Blueberries
  • 5g Lemon Zest

Cooking Instructions

1. preheat oven to 180.c pulse digestives and melted marg in food processor add one tablespoon of water press the mix into a grease proof lined baking tray .chill while you prepare the filling for the filling beat together cream cheese and honey ,add the eggs vanilla and lemon rind and beat again until smooth and combined spread the cream cheese mix over the base and sprinkle with the berries and rhubarb bake for around 30 minutes or until the filling is mostly set chill down and then cut into 8 bars 100g each
