This soup is so full of good nutritious ingredients I just wanted to share it with you. Make up a batch and enjoy over a few days. Just the job!! Add a dollop of low fat creme fraiche for 25 cals extra if you wish.
Serves 6 – 160 cals per person
400g chopped canned tomatoes
1 medium onion finely choppped
100g green beans sliced in to 2cm pieces
3 carrots diced
1 tsp smoked paprika
75g chopped chorizo
3 garlic cloves finely chopped
1.5 litres chicken stock made with two chicken stock cubes annd 1.5l water
150g curly kale or green cabbage shredded
1tsp caster sugar
400g can cannellini beans (drained and rinsed)
Heat the oil and and fry off the garlic and onions until soft but not brown.
Add the chorizo carrots and paprika to the pan and cook slowly until the juices from the chorizo intermingle.
Season with a little salt and pepper and then add the chopped tomatoes with the stock and sugar.
Bring to the boil and then simmer for about 15 mins, add the kale or cabbage and the canned and fresh beans. You can add a little more water at this point if it is too thick.
